Pasta Alfredo

suggestion for next time: this is adapted from https://www.recipetineats.com/salmon-alfredo-pasta-done/ which i've made before and like

Ingredients

~1.25 lb meat (e.g. chicken thighs or breasts) some cooking wine 8 cloves of garlic minced 1 onion finely diced 1 cup heavy cream 6 tablespoon butter generous salt and pepper to taste 1 1/2 cups of parmesan (or 4.5oz / 125g) 12oz fettuccine 1/2 cup pasta water

Steps

  1. cook meat with a bit of butter and olive oil, lightly season with salt and pepper remove meat from pan and set aside
  2. in pan used to cook meat, add onions and some cooking wine to deglaze the pan, cook on medium low until almost tender
  3. add garlic and fry until fragrant
  4. add butter, cream, salt, and pepper; stir until butter is melted
  5. simmer for 3 minutes
  6. add parmesan in batches and stir until melted
  7. add pasta, pasta water, and meat. toss to coat meat and pasta and let simmer for 1-2 minutes
  8. serve fresh and garnish with parsley or another herb of your choosing

thoughts: definitely garnish. also maybe some lemon juice would help? maybe too much pasta water in recipe but idk. definitely cook pasta the recommended amount of time and stir vigorously.

thought: to make vegetarian, use mushroom. maybe some asparagus or brussel sprouts?

notes

for mushrooms, 1.8lb is too much. maybe shoot for 1.5lb or 1.25
