100 g 90% dark chocolate

1 tsp vanilla extract (vibe measured)

2 tbsp sugar

2 tbsp cocoa powder

1 3/4 cup 2% fairlife milk

1/4 cup heavy cream

add everything into pot. heat very slowly til 160 while whisking

add everything into pot. heat very slowly til 160

thoughts: i like the texture. maybe could be a bit thicker, reduce to 1.75 cup maybe or 1.5 cup? idk. probably drop down to 85% chocolate

3 tbsp cocoa powder

1.75 cup pistachio milk

add everything into pot. heat very slowly til 160

thoughts: i like the texture. i do wish it was a darker chocolate and switch it to 2 tbsp to cocoa powder. pistachio milk is also solid. switch oz to g probs

3.5 oz 72% dark chocolate

2 1/2 tbsp cocoa powder

2 cup fair life whole milk

add everything into pot. heat very slowly til 160

thoughts:

use a scraper to get chocolate off the bottom. definitely use good 90% dark chocolate, this isn't very strong. on the liquidy side, i'd cut like 1/4 cup of milk, maybe even 1/2 cup

no skin this time! i heated it mostly off the burner while whisking vigorously

2024-03-12:

3.5 oz 90% dark chocolate

1 tsp vanilla extract

3 tbsp sugar

2 1/2 tbsp cocoa powder

1 1/2 cup whole milk

1/2 cup baileys

break chocolate into small pieces or chop

put all ingredients in pot and heat very slowly stirring regularly to prevent burns. heat to 160 to 170

thoughts: heating it slower and stirring constantly helped. our stove runs hot so even slower would be ideal but :shrug:. the much baileys was quite strong but pretty yummy. sugar was good, at least with this alcohol level

still formed a skin which i don't love

2024-02 (estimate):

3.5oz 90% dark chocolate

thoughts: add more sugar, maybe add salt and no vanilla extract, maybe add more vanilla extract

problem: it forms a skin. how to stop? maybe heat it slower
