Ingredients

1lb potato

1/2 tsp baking soda

5 cups water (should be 4 cups)

onion?

bell pepper?

peanuts

lots of 5 spice and salt

Instructions

cut potatoes into 1-1.5cm pieces

cook potatoes in with 1/2 tsp baking soda and 4 cups of water or something

start preheating cast iron as you start boiling

boil potatoes for 3 minutes

drain potatoes and toss into spice bowl

in the meantime, melt 1tbsp butter and 1tbsp of olive oil

pan should be on high or medium high

once butter is fully melted, put potatoes in pot

put potatoes in single layers. every 4-5 minutes flip/rotate all potatoes and put ib single layer again. do this 3-4 times

sauce: 1/2 ketchup, 1/2 mayonnaise + a lot of pepper

thoughts:

the potatoes are a little soft on the inside but good and crispy. maybe a bit more oil because it gets cooked a bit spotty later?

once potatoes are half done, add peanuts. aim for a 1:2-3 ratio of peanut to potato
